Περιγραφή Μαθήματος

The course aims to give a comprehensive introduction to food processing and preservation.

On successful completion the student will be able to:

  • Understand basic principles and processes in technology of different foodstuff categories.
  • Describe basic concepts and methods for food preservation and understand their relation to food safety and quality.
